🌍 Origin
Omakase — 'I leave it to you' — is the ultimate expression of the chef-guest relationship in Japanese cuisine. Originating in Edo-era sushi bars where the chef would serve whatever was freshest that day, it evolved into a formal multi-course format in the 20th century. Istanbul's omakase scene emerged after 2015 with a small number of Japanese-trained or Japan-experienced chefs opening counter-dining experiences in Nişantaşı and Etiler — the city's most exclusive dining format.

🍽️ How to Eat
At omakase, the chef is in complete control — do not rush, do not ask for substitutions, and eat each piece immediately as it is handed to you (the rice temperature is set for that moment). Do not dip nigiri rice-side into soy sauce — dip the fish. Ask questions, but let the chef guide the conversation. An omakase meal typically lasts 90 minutes to 2.5 hours.
