🌍 Origin

The wine board concept draws from French charcuterie, Italian antipasto and Spanish tapas traditions — a spread of preserved meats, aged cheeses and accompaniments designed to extend a bottle of wine. Istanbul's wine bar scene, which exploded after 2010 in Beyoğlu, Cihangir and Kadıköy, developed its own hybrid version: combining imported European cheeses with Turkish local products — Ezine tulum, Kars gravyer, sucuk, kavurma and Aegean olives.

A şarap tabağı is a slow dish — graze across it over an hour rather than eating it all at once. Start with the milder cheeses, move to the aged and the cured meats. Pair honey with blue or aged cheese. Eat with the bread, not just as a vehicle for toppings. Order a bottle of Turkish red (Kalecik Karası, Öküzgözü) or white (Emir, Narince) to match.
