🌍 Origin
Wagyu A5 nigiri — a slice of the world's most marbled beef, lightly torched and draped over seasoned sushi rice — became one of the signature courses at Istanbul's top omakase counters in the late 2010s. Japanese Wagyu A5 (particularly Kagoshima and Miyazaki prefectures) is imported directly from Japan at significant cost. The torching (aburi) technique renders the fat slightly, releasing the extraordinary buttery flavour of the ultra-marbled beef.

Eat wagyu nigiri in a single bite immediately after it is handed to you — the moment it is placed on the rice, the fat begins to cool and the optimal texture window closes fast. Do not add soy sauce unless the chef instructs; the beef's natural umami and the rice seasoning are sufficient. This is one of the most expensive single bites in Istanbul's restaurant landscape — pay full attention.
