Köfte in bread — Istanbul's original street burger — has been sold at köfteciler and market stalls for over a century. The most famous iteration is the İnegöl köftesi ekmek arası, but Istanbul's version uses the flat grilled patty (İstanbul köftesi). The Sultanahmet Köftecisi, open since 1920, is the most famous single practitioner of this format in the city.
