🌍 Origin
A centrepiece of southeastern Turkish and Ottoman banquet cooking. The word 'kaburga' means ribs in Turkish. Historically prepared for weddings and feast days — whole lamb ribs slow-roasted in a tandir (clay oven) or braised for hours in a covered pan. The stuffed version (dolma kaburga) is a dish of Ottoman imperial kitchen refinement, filled with rice, pine nuts, currants and spices.

Kaburga is a sharing dish — the ribs are brought whole to the table and carved. The meat should be so tender it separates with a spoon. Eat with rice pilav and cacık (yoghurt with cucumber and garlic). The stuffing inside dolma kaburga is the final reward.
