Pad Thai was promoted as Thailand's national noodle dish by the Thai government in the 1930s and 1940s as part of a nation-building campaign — a unified dish from a diverse country. It quickly became Thailand's most famous street food export. Istanbul's Thai restaurants, clustered in Beyoğlu and Şişli, serve it as the centrepiece of their menus.
