🌍 Origin

Ramen — Japanese wheat noodles in slow-cooked broth — has Chinese origins but was transformed into a Japanese institution in the 20th century. Regional styles include tonkotsu (Fukuoka, creamy pork bone), shoyu (Tokyo, clear soy-based) and miso (Sapporo). Istanbul's ramen scene is small but growing: several dedicated ramen shops opened post-2018 in Beyoğlu and Kadıköy, making house noodles and simmering broths for 18+ hours.

🍽️ How to Eat
