🌍 Origin
Peking duck (北京烤鸭) has been served in Beijing since the Imperial era — records date to the Yuan dynasty (1271–1368). The preparation requires days of work: the duck is air-dried, glazed with maltose syrup, inflated with air to separate the skin from the fat, then roasted in a hung oven until the skin is lacquered and shatteringly crisp. Authentic Peking duck is carved tableside and the skin — not the meat — is the prized element.

The carved skin and meat are brought to the table separately. Place a small piece of lacquered skin on a Mandarin pancake, add hoisin sauce, cucumber and spring onion, then roll and eat in one or two bites. The skin should shatter; the meat is secondary. A whole duck serves two to four people. At Istanbul's Chinese restaurants, this dish usually requires advance ordering.
